Free Range Chicken with Shallots, Baby Spinach and Brown Rice

This recipe is GLORIOUS! Especially as you cook everything in coconut oil which is so so scrummy and aids digestion.

To ensure there are no added hormones in my body I can only eat Free Range, Organic Chicken and Organic fruit and vegetables, so this meal is perfect for that and it tastes insanely good too.

  
Here’s the recipe to serve 2 people:

2 Free Range Organic Chicken Breasts

4 Organic Shallots

1 Organic Red Onion

Bag of Organic Baby Leaf Spinach

Pinch of Nutmeg

1/2tsp of Turmeric

1 mug of Brown Rice

Boil a saucepan of water and add 1 mugful of brown rice to the water and cook as per instructions (about 25 minutes) Dice the chicken breast and cook over medium heat in raw organic coconut oil for 10-15 minutes, add the nutmeg, turmeric, diced shallots and onion and cook for a further 5-10 minutes until they are soft and the chicken is cooked through. Add a handful of spinach per person to the chicken mixture and allow to wilt for about 1 minute. Serve over drained brown rice and enjoy!
